
Smoked Cornish Game Hen
This is a very aromatic and flavorful poultry recipe. It would be used on your chicken, turkey or even wild game such as duck pheasant, etc. It does have a little heat with the cayenne pepper and black pepper so if you want to lessen the amount of heat you can put in a little less of those. But these flavors work really well together. I used just 2 Cornish Game Hens that I got from my local store.
After it was done this was full of flavor and moist. It was really enjoyable to eat. It has been a favorite of mine and the friends I have served it to.
Ingredients
Seasoning
- 2 Tbsp Sea Salt
- 3 1/2 tsp Black Pepper
- 2 1/2 tsp Oregano
- 2 1/2 tsp Thyme
- 2 tsp Cayenne Pepper
Hens
- 2 Tbsp Butter could substitute olive oil or coconut oil
- 2 Whole Cornish Game Hens Could use Chicken or Turkey really any poultry would work
Instructions
Prepping for cooking
- Mix ingredients above
- start smoker (or oven if you dont have a smoker) set temp to 275 degrees
- Dry hens and rub with melted butter
- Take combined spices from above and rub all over hens
- Cook hens in smoker until internal temp is 180 degrees
- take out and let set wrapped in aluminum foil for 20-30 mins to let the meat settle and reabsorb its juices.
- Cut Hens in half and serve with your favorite veggie or side.

A nice aromatic and flavorful recipe for your poultry that will impress your friends and family. Has a nice combination of heat and flavors. Even though this is a smoked recipe it does not have to be smoked it can be cooked in your oven or grill (in-direct heat).
